Tell us what's new this year about the truck:
Cordwood: An oil change! Also this year we will be adding online ordering to the mix so keep an eye out for us on doordash etc.
Tell us something about the menu that you are excited about
Cordwood: We are really excited about the Piggy Back, our top-selling sandwich which includes our pulled pork and mac-n-cheese piled high on a bun. We are also really excited about our vegetarian barbecue sandwich, the Bomb Diggity, been tweaking the recipe over the off-season.
What are you listening to while you cook or do work?
Cordwood: A lot of Vulfpeck, Madame Gandhi, Charlie Crockett, and always Motown.
What's your favorite drink at The Little Fleet?
Cordwood: Really enjoy the rotating Farmer's Market cocktails, however the go-to is a mojito.
What's your favorite hike in the area?
Cordwood: No such thing!!! Pyramid Point is definitely a favorite. Less accessible but equally rewarding is the hike out to the western dunes on South Manitou island.
What local produce are you most looking forward to using this year on the truck?
Cordwood: The freshest microgreens around from Lakeview Hill Farm!
Who is your chef or restaurant inspiration?
Cordwood (Greg): My friend Brendan McCall (chef/co-founder of Mani, Isalita, Mikette in Ann Arbor) who I met while working at Tantre Farm in Chelsea, MI. For barbecue specifically it would be Aaron Franklin (founder Franklin BBQ, Austin, TX).
Cordwood (Walt): Cooking with mom inspired my interest in cooking and I gained a reputation as "Chef Paws" at deer camp every year, owing to hands being on the larger side. Completed the culinary arts program at NMC later on.
What have you been doing since you moved your truck out of The Little Fleet in October:
Cordwood (Greg): Completing my first American Birkebeiner 50k skate ski race, woot woot! Also been working on Cordwood's 5-yr plan, woodworking, throwing pottery, and checking news feed too much.
Cordwood (Walt): Snowmobiling trips through the UP, recipe development, hand surgery :(, R&R.
Do you have a favorite Little Fleet experience?
Cordwood: Any time The Daylites play! Especially partial to an acoustic yurt show.
What's the best thing you ate recently?
Cordwood: The best St. Patty's Day feast I've ever had - thanks Fran!!!
What else do you want the public to know about you and the truck.
Cordwood: Cordwood caters! Enjoy a stellar bbq buffet at your wedding or rehearsal dinner party or have our trailer come out and serve at your next party or event! Cordwood built out the truck from scratch in 2015 and last year raised the roof on it so we weren't always crouching anymore!
